The idea for Hoysters came from a trip to New York, where quirky cafés are rife, and loaded with cool bric-a-brac, seemingly contrasting elements that when put together, somehow work. It wasn’t long before odds and ends were collected, dressings and furniture procured – so what came next was the quest to find the perfect venue.

It needed to be right to realise the vision. The building needed to be steeped in history and had to be old and unusual. The building that was the Co-op over 40 years ago, and then an interior design shop, seemed like a perfect fit. Hoysters still retains some of the old features that the design shop left behind too, such as the quirky wallpaper and the dresser behind the bar.
